Ingredients:
• 4 white burger buns
• 2 tbsp mayonnaise
• 2 tsp ketchup
• 1 tsp American mustard
• 1 tsp pickle juice
• 2 gherkins, finely chopped
• 480g beef mince, rolled into 4 equal balls
• 1 tsp sunflower oil
• 4 slices burger cheese or American-style cheese
• ½ small iceberg lettuce, shredded
• 1 red onion, thinly sliced
• 2 tomatoes, thinly sliced
Instructions:
1. Lightly toast the inside of each burger bun in a dry frying pan until golden.
Mix the mayo, ketchup, mustard, and relish to create your burger sauce.
2. Heat oil in a large, heavy-based frying pan. Smash down each beef mince ball with a spatula until flat.
Let them cook undisturbed for 2–3 mins, flip, and cook for another 2 mins.
Add a slice of cheese to each patty while it’s still in the pan to melt.
3. Meanwhile, cook the chicken fillets in the same pan for 6–8 minutes until golden and cooked through.
4. Spread burger sauce over the base of each bun, then layer with lettuce, onions, tomato, a beef patty, chicken, and another patty.
Top with the bun lid and serve immediately.

• Use lettuce wraps instead of buns for a lower-carb option.
• Swap beef mince for lean turkey mince.
• Add grilled mushrooms or pickled jalapeños for extra flavour.
