Ingredients:
• 4 white burger buns
• 2 tbsp mayonnaise
• 2 tsp ketchup
• 1 tsp American mustard
• 1 tsp pickle juice
• 2 gherkins, finely chopped
• 480g beef mince, rolled into 4 equal balls
• 1 tsp sunflower oil
• 4 slices burger cheese or American-style cheese
• ½ small iceberg lettuce, shredded
• 1 red onion, thinly sliced
• 2 tomatoes, thinly sliced
Instructions:
1. Toast the cut sides of the burger buns in a dry frying pan until lightly golden. Mix the mayonnaise, ketchup, mustard, pickle juice and gherkins to make a sauce.
2. Heat a large, heavy-based frying pan or cast-iron skillet over a high heat. Working in batches, add the beef mince balls to the hot pan, pressing down with a spatula to flatten them. Season with salt and cook for 2 mins.
3. Flip and press down again, then add a cheese slice to each patty. Cook for another 1-2 mins until the cheese has melted and the burgers are well browned.
4. Spread the burger sauce over the bottom halves of the buns, then add the lettuce, onions and tomatoes. Top with the burger patties and the bun lids. Serve immediately.
