Ingredients:
• 1 tbsp olive oil
• 8 pork sausages, cut into chunky pieces
• 1 large onion, chopped
• 2 garlic cloves, crushed
• 1 tsp chilli powder
• 400g can chopped tomatoes
• 300g short pasta (such as fusilli or farfalle)
• 100g mozzarella, grated
• 2 tbsp parmesan, grated
Instructions:
1. Heat the olive oil in a large frying pan and cook the sausages until browned all over.
Remove, slice into bite-sized pieces, then set aside.
2. In the same pan, gently cook the onion for 5 minutes until soft.
Stir in the garlic and chilli flakes, cooking for 1 minute more.
3. Pour in the chopped tomatoes, oregano, and sugar. Simmer for 10 minutes to reduce slightly, then return the sliced sausage to the pan.
4. Meanwhile, cook the pasta according to pack instructions, then drain and combine with the sausage sauce.
5. Tip everything into a large ovenproof dish. Dot the mozzarella over the top and bake at 200°C (180°C fan) for 20 minutes until bubbling and golden.
6. Scatter over the basil just before serving.
