Ingredients:
• 180g raw prawns, peeled
• 4 skinless salmon fillets
• 1 small bunch coriander, chopped
• 3 spring onions, chopped
• Zest and juice of 1 lemon
• 1 tbsp olive oil
• 4 burger buns, toasted
• 60g mayonnaise or Greek yogurt
• 4 tsp chilli sauce
• 1 cucumber, peeled into ribbons
• 2 little gem lettuces
Instructions:
1. Place the chicken pieces into a bowl and coat with the flour and a pinch of salt until evenly coated.
2. In a separate bowl, whisk together the ginger, garlic, soy sauce, honey, and lime juice until smooth.
3. Heat a large frying pan or wok over medium heat and drizzle in the oil. Once hot, add the coated chicken and cook for 4–5 minutes until lightly golden.
4. Pour in the honey-ginger glaze and stir to coat the chicken well. Simmer for another 3–5 minutes, or until the sauce is sticky and the chicken is fully cooked through.
5. Taste and season as needed. Serve hot with fluffy rice and steamed broccoli or your favourite greens.
