Ingredients:
• 180g raw prawns, peeled
• 4 skinless salmon fillets
• 1 small bunch coriander, chopped
• 3 spring onions, chopped
• Zest and juice of 1 lemon
• 1 tbsp olive oil
• 4 burger buns, toasted
• 60g mayonnaise or Greek yogurt
• 4 tsp chilli sauce
• 1 cucumber, peeled into ribbons
• 2 little gem lettuces
Instructions:
1. In a food processor, pulse prawns and salmon until coarsely chopped.
2. Transfer to a bowl and mix in coriander, spring onions, lemon zest, and juice.
3. Shape into 4 patties.
4. Heat olive oil in a pan over medium heat and cook patties for 3-4 minutes on each side until cooked through.
5. Mix mayonnaise with chilli sauce to make spicy mayo.
6. Assemble burgers with lettuce, cucumber ribbons, patties, and spicy mayo in toasted buns.
