Ingredients:

• 1 tbsp olive oil
• 1 onion, chopped
• 1 red pepper, deseeded and finely chopped
• 1 garlic clove, crushed
• 400g can chopped tomatoes
• 500g pack gnocchi
• Handful of basil leaves, torn
• Half a 125g ball mozzarella, torn into chunks

Instructions:

1. Heat the grill to high. Heat the olive oil in a large frying pan, then soften the chopped onion and red pepper for 5 minutes.

2. Stir in the garlic and cook for 1 minute more. Add the chopped tomatoes and gnocchi, bring to a simmer.

3. Bubble for 8–10 minutes, stirring occasionally, until the gnocchi is soft and the sauce has thickened.

4. Season, stir through the basil, and pour into a large ovenproof dish.

5. Scatter over the mozzarella chunks and grill for 4–5 minutes until the cheese is bubbling and golden.

• Use wholegrain gnocchi or lentil-based gnocchi for more fibre
• Swap mozzarella for a reduced-fat version or dairy-free alternative
• Add chopped spinach or courgette for extra veg
• Throw in some chilli flakes for a spicy kick
