Ingredients:

• 30g unsalted butter
• 240g baby spinach
• 4 chicken breasts, skin removed, sliced crosswise into strips
• 4 garlic cloves, finely chopped or grated
• 200ml double cream
• 40g Parmigiano Reggiano, finely grated
• Cooked rice or potatoes, to serve (optional)

Instructions:

1. Melt the butter in a large frying pan over medium heat. Add the spinach and cook gently for 2–3 minutes until wilted. Drain and set aside.

2. In the same pan, pour in the olive oil and turn up the heat. Add the chicken strips and fry for 3–4 minutes until golden and cooked through. Remove and set aside.

3. Add the garlic to the pan and gently fry for 1 minute. Then pour in the double cream and stir well. Bring to a simmer and cook for 2 minutes until slightly thickened.

4. Stir the grated parmesan into the cream, then return the cooked chicken and spinach to the pan. Stir to coat everything in the sauce. Cook for a final 2 minutes to ensure everything is hot through.

5. Scatter with extra parmesan and serve with rice, mash or potatoes - or enjoy as a low-carb option on its own.

Healthy Swaps & Tips:

• Swap double cream for light cream or crème fraîche
• Add mushrooms or sun-dried tomatoes for a twist
• Use chicken thighs for extra tenderness
• Stir in a spoonful of cream cheese for richness
• Goes great with cauliflower mash for low-carb lovers

Storage & Meal Prep:

• Store in an airtight container in the fridge for up to 3 days
• Reheat gently on the hob or in the microwave until piping hot
• Not recommended for freezing due to cream content

Ideal For:

• Families wanting a fuss-free one-pan meal
• Low-carb and keto eaters looking for creamy dishes
• Chicken lovers wanting a rich but healthy dinner
• Meal preppers seeking comfort meals without the carbs
• Anyone wanting spinach to taste seriously indulgent
