Ingredients:

• 1 tbsp olive oil
• 4 boneless skinless chicken thighs, sliced
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• 2 tbsp tomato purée
• 200g light soft cheese
• 300g short pasta (such as penne or fusilli)
• 25g grated parmesan (optional)
• Handful of parsley, chopped (optional)

Instructions:

1. Heat the oil in a frying pan over medium heat. Add the chicken and fry for 7-10 mins, or until golden and cooked through. Remove and set aside.

2. In the same pan, add the onion and cook for 5 mins until softened. Stir in the garlic and cook for 1 min more.

3. Stir in the tomato purée and cook for 2 mins. Return the chicken to the pan and stir through the soft cheese with a splash of pasta water to loosen.

4. Meanwhile, cook the pasta in a large pan of salted boiling water according to pack instructions. Drain, reserving a cup of water.

5. Toss the pasta through the sauce, adding a splash of pasta water if needed. Serve topped with parmesan and parsley, if using.
