Ingredients:
• 1 tbsp olive oil
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• 120g chorizo, diced
• 2 x 400g cans chopped tomatoes
• 1 tsp caster sugar
• 600g fresh gnocchi
• 125g mozzarella ball, cut into chunks
• Small bunch of basil, torn
• Green salad, to serve
Instructions:
1. Heat the olive oil in a large frying pan over medium heat. Add the chopped onion and cook for 5 minutes until softened.
2. Stir in the crushed garlic and diced chorizo. Cook for 5 minutes until the chorizo starts to crisp and release its oils.
3. Pour in the chopped tomatoes and add the caster sugar. Season with salt and pepper. Simmer for 10 minutes until the sauce thickens slightly.
4. Meanwhile, cook the gnocchi according to the package instructions. Drain and set aside.
5. Stir the cooked gnocchi into the tomato and chorizo sauce. Mix well to combine.
6. Transfer the mixture to a large ovenproof dish. Scatter the mozzarella chunks over the top.
7. Preheat the grill to high. Place the dish under the grill for 5 minutes or until the cheese is melted and golden.
8. Remove from the grill and scatter the torn basil leaves over the top. Serve with a green salad.
