Ingredients:
• 12 pork meatballs
• 300g orzo pasta
• 200g asparagus, trimmed and cut into pieces
• 100ml double cream
Instructions:
1. In a large frying pan, cook the pork meatballs over medium heat until browned and fully cooked through.
2. Meanwhile, cook the orzo according to the packet instructions. Add the asparagus during the final 2 minutes of cooking.
3. Drain the pasta and asparagus, making sure to reserve a small cup of the pasta water.
4. Return the drained pasta and asparagus to the pan, stir in the cream, and add the cooked meatballs.
5. Heat everything gently, adding a splash of the reserved pasta water if needed to loosen the sauce.
Healthy Swaps & Tips:
• Swap pork meatballs for turkey or chicken versions to reduce fat
• Use single cream or half-fat crème fraîche for a lighter sauce
• Add garlic or fresh herbs for extra flavour
• Throw in some frozen peas or spinach for a veggie boost
• Use gluten-free orzo if needed
Storage & Meal Prep:
• Keeps well in the fridge for up to 3 days
• Reheat gently with a splash of water or milk to loosen the cream sauce
• Not ideal for freezing due to cream, but fresh batch prep is quick and easy
Ideal For:
• Busy families after a one-pan creamy meal
• Picky eaters – it’s mild, cheesy, and full of texture
• Meal preppers who want comforting lunches
• Gym-goers needing a carb and protein hit post-workout
• Anyone bored of spaghetti – orzo is a fun twist!
