Ingredients:
• 400g skinless cod loin or haddock, cut into thick fingers
• 50g plain flour
• 1 egg, beaten
• 75g breadcrumbs
• 1 tbsp oil spray
• Lemon wedges, to serve (optional)
Instructions:
1. Set up a breading station with three shallow bowls: flour in one, beaten egg in the second, and breadcrumbs in the third.
2. Coat each fish finger in flour, then egg, then breadcrumbs, pressing the crumbs on firmly.
3. Spray the air fryer basket lightly with oil, place the fish fingers inside, and spray the tops.
4. Air fry at 200C for 10–12 mins, flipping halfway, until golden and crisp.
5. Serve hot with lemon wedges, chips, or peas.
