Ingredients:

• 400g skinless cod loin or haddock, cut into thick fingers
• 50g plain flour
• 1 egg, beaten
• 75g breadcrumbs
• 1 tbsp oil spray
• Lemon wedges, to serve (optional)

Instructions:

1. Set up three shallow bowls: one with flour, one with beaten egg, and one with breadcrumbs mixed with oregano.

2. Dip each fish finger into the flour, then the egg, and finally the breadcrumbs. Press the coating on firmly.

3. Lightly spray the air fryer basket with oil. Place the coated fish fingers inside and spray the tops.

4. Cook at 200°C for 10–12 minutes, turning halfway through, until golden and crisp.

5. Serve hot with lemon wedges, chunky chips, or mushy peas.
