Ingredients:
• 3 tbsp vegetable oil, plus extra for the tin
• 2 large, very ripe bananas
• 1 large egg, beaten
• 70g light brown soft sugar
• 250g nutty muesli
• 100g tropical dried fruit mix
Instructions:
1. Preheat the oven to 180°C/160°C fan/gas 4. Lightly oil a 20cm square tin and line it with baking parchment.
2. In a mixing bowl, mash the bananas until smooth. Stir in the oil, beaten egg, and sugar.
3. Fold in the muesli, a pinch of salt, and most of the tropical fruit mix, reserving a small handful for topping.
4. Spoon the mixture into the prepared tin and spread evenly. Sprinkle the reserved fruit on top.
5. Bake for 35–40 minutes until golden and firm. Let cool completely in the tin.
6. Once cool, turn out onto a board and slice into 10 bars.
7. Store in an airtight container for up to 4 days.
Healthy Swaps & Tips:
• Swap egg for a flax egg (1 tbsp flaxseed + 3 tbsp water) to make it vegan
• Add a pinch of cinnamon or nutmeg for warming flavour
• Use gluten-free muesli if required
