Ingredients:
• 3 tbsp sunflower oil
• 4 frozen hash browns
• 3 pork sausages
• 4 rashers smoked back bacon
• 15g butter, plus extra for spreading
• 100g chestnut mushrooms, sliced
• 2 eggs
• 400g can baked beans
• 6 slices white bread
• Ketchup and brown sauce, to serve
Instructions:
1. Preheat the oven to 220°C/200°C fan/gas 7. Rub 1 tbsp of oil onto a shallow roasting tin. Add the hash browns to one side and the sausages to the other. Roast for 15 mins. Flip the hash browns and turn the sausages, then roast for another 10–15 mins until golden and cooked through.
2. Meanwhile, heat 1 tbsp of oil in a frying pan over medium heat. Fry the bacon until crisp, then remove. Add the butter to the pan and sauté the mushrooms until golden.
3. Warm the baked beans in a separate saucepan until hot.
4. Toast all 6 slices of bread and spread with butter.
5. In a clean pan, heat the remaining 1 tbsp oil and fry the eggs to your liking.
6. To assemble:
• First slice – layer three halved sausages, two rashers of bacon, and half the mushrooms
• Second slice – spread with ketchup or brown sauce, then add two hash browns and a fried egg
• Third slice – spread with more sauce if desired, and place on top to complete the stack
7. Repeat to build a second sandwich. Serve immediately with a generous spoonful of baked beans.
