Ingredients:

• 500g floury potatoes (e.g., Maris Piper), peeled and quartered
• 50g plain flour, plus extra for dusting
• 1 tbsp vegetable oil, plus extra for frying
• Salt, to taste

Instructions:

1. Place the peeled and quartered potatoes in a large saucepan. Cover with cold water, add a pinch of salt, and bring to the boil. Reduce heat and simmer for 15–20 minutes until tender. Drain thoroughly and let them steam-dry for a few minutes.

2. Mash the potatoes until completely smooth with no lumps.

3. Stir in the flour and a pinch of salt. Mix until a soft, pliable dough forms.

4. Lightly flour a clean surface and knead the dough briefly until smooth. Divide into two equal portions and roll each out into a 1cm thick circle. Cut each circle into quarters to form 4 triangle-shaped farls.

5. Heat a splash of oil in a non-stick frying pan over medium heat. Cook the farls in batches for 3–4 minutes per side until crisp and golden.

6. Serve warm as they are, or topped with your favourite breakfast staples like fried eggs and bacon.
