Ingredients:

• 1 tbsp vegetable or sunflower oil
• 2 eggs
• 2 small naan breads
• 4 tbsp low-fat cream cheese
• 2 tbsp mango chutney
• 1 avocado, halved and sliced
• ½ lime, juiced
• 1 green chilli, sliced
• Small handful of coriander leaves

Instructions:

1. Preheat the oven to 200°C/180°C fan/gas 6. Heat the oil in a frying pan and fry the eggs to your liking.

2. While the eggs cook, warm the naan breads in the oven for a few minutes until soft.

3. Spread each naan with 2 tbsp cream cheese, then drizzle with 1 tbsp mango chutney.

4. Top with a fried egg, then layer on the avocado slices.

5. Squeeze over lime juice and scatter with green chilli slices and coriander leaves.

6. Season with salt and pepper, and serve immediately.
