Ingredients:

• 2 tbsp half-fat soured cream
• 2 tbsp lemon juice
• ½ pack dill, finely chopped
• 250g pouch ready-to-eat quinoa
• ½ cucumber, halved and sliced
• 4 radishes, finely sliced
• 100g smoked salmon, torn into strips

Instructions:

1. In a small bowl, stir together the soured cream, lemon juice, and most of the chopped dill (save a little for garnish).

2. In a separate bowl, mix the quinoa with sliced cucumber and radishes. Stir through half of the dill dressing. Season with salt and pepper.

3. Divide into two lunch pots or bowls. Top each with smoked salmon strips and a sprinkle of the reserved dill.

4. Keep the remaining dressing in a separate pot and drizzle over just before eating.
